kid meat is young goat meat less than 12 months in age.It is similar to lamb or veal but with a subtlety different flavor.Kid is sometimes referred to as Capretto or Chevon or Cabrito.
Capretto-is an Italian term for milk fed kid generally younger than 3-4 month of age.
Chevon-refers to kid up to 12 months in age.
Cabrito-is meat from very young milk fed goats between 4-8 weeks of age.The meat is tender,juicy and very lean and tasty at this age.All parts of a cabrito are used,including the innards or organ meats.
