A sample of consumer preferences from around the world.
Italian Easter and Christmas:market prefers light weight kids (18-28 lb) liveweight 4-12 weeks old.The Greek market prefers kids in the 30-40 lb range (8-16 week old).
Muslim Demand:is overwhelmingly for male and female kids,milk teeth only (under 12-14 months of age) and weighting 50-70 lb.Leanness is essential.These requirements are in effect throughout the year.The 3 day id-al-Fitr period immediately following Ramadan,the demand is for yearling goat(2 permanent teeth only) of either sex and without noticeable blemish (not castreated or deformed etc.)Goats destined for the Muslim market must be slaughtered in Halal approved fashion,requiring specific procedures and personnel.
Chinese Market:for goat is the preferred weight range 60-80 lb live,and goats in good condition.
Latino Demand:for goat meat varies across weight ranges.Cabrito (small goat) is the term applied to veal kids weighting 15-25 lb live,milk fed only during their 4-10 weeks of life.Larger goats in moderate to poor condition are also taken throughout the year.
Caribbean Islanders and West Africans:tends to be for cuts used in curries,stews,soups.Packages of cubed bone in 4-6 lb package from older,lower condition goats are typically taken.Jamacians are the primary buyers of mature bucks and goat-head soups.
Koreans and Vietnamese prefer black goats.
