Hi does anybody have any ideas on the meatshop bizniz they like to share?Whats the most expensive cuts of meat?

Mr Hog,
The last time I was in the Phils. I remember in the wet market set up,one bought meat by the kilo.One points at the part of the carcass you want and the butcher cuts you a chunk of meat.Meat was sold in kilo chunks.Not sure if the grocery stores sell their meat by cuts,pork chops,loins,front shoulder,hams,bacon,hamburger,they do make processed meats tho.Maybe someone should visit a meat shop and check out their operations,then you would have a better understanding of what your customer(s) is looking to buy.Good luck with your venture.

Wet market and grocery is almost the same you could buy per cut that you like. although in wet market  they have limited supply of choice cuts.

hahaha, havent noticed that one, i was focusing on the comments more. anyway that can also be adoptable to our market.  ::)

I think that type of  meat market you are talking about would be tough to start in most places in the phills,just my opionion .

another tip to trim the overhead in meatshop

dont use meat chiller display like you see in monterey, its just too expensive (200K) and requires big maintenance cost 

use ice cream freezer instead and then put stainless trays on top of it to display your meat cuts. the extra space beneath the trays can be used for extra storage. I saw many well-meaning meatshops doing that. ice cream freezer costs only 30K and twice the chilling/freezing capacity

I am not familiar with the capital, bibigay lang ako ng tip.

Yun mga meat na nasa chiller/ freezer from time to time dapat ibinibiling nila kasi nagkakaroon ng discoloration sa isang side ito.

learn how to process meat din. kasi minsan madaming trimmings  /mataba and matumal ang karne by processing it mas tatagal sila.

binabaliktad, from time to time para hindi  magkaroon ng discoloration yun meat...

yun minsan nakikita natin greenish discoloration sa meat na chilled dahil yun sa isang side lagi nalalamigan yun isa hindi masyado.
